Potato Salad
This family recipe is vegan by design. We haven’t used mayonnaise for several years and also use vegetable stock for the dressing. Instead, we mash a potato into the dressing. Chives and pickled gherkins can be added optionally. Bon appétit!

Ceviche de Banana
Ceviche is the national dish of Peru. It is prepared on the coast with raw, freshly caught fish and is therefore not eaten in the evening. The dish also exists in other Latin American countries such as Chile, Ecuador and Colombia and dates back to the time before the conquest. In the meantime, vegan variants are spreading. For example, there is mango ceviche, palm heart ceviche, bean ceviche or plantain ceviche. They usually only have the sauce in common with the original. Many of these vegan variants are cooked because, for example, plantains and beans are inedible raw.

Ensalada Criolla
Ensalada Criolla is common in southern South America. As a basic recipe, it is often eaten with asado. This is the Uruguayan version of this mixed salad. It also exists in countries like Peru, Chile and Argentina. However, there it consists mainly of onions, tomatoes and coriander, while the Uruguayan version is much more elaborate.

Milanesa Vegana à la Lupe
Milanesa is very often served in Argentina as street food or in snack bars and restaurants. It is a piece of breaded meat that usually comes in a sandwich. This recipe is from my friend. She uses aubergines for the schnitzel, but of course other vegetables can be used.

Hogao
Hogao is a typical Colombian sauce that is used as a side dish, for seasoning or as an ingredient in various dishes. It goes particularly well with arepas but also tamales and patacones.
