Hogao is a typical Colombian sauce that is used as a side dish, for seasoning or as an ingredient in various dishes. It goes particularly well with arepas but also tamales and patacones.
Peel and chop the shallots and garlic. Wash and dice the tomatoes.
Heat a pan with oil and add the tomatoes, shallots, garlic and cumin and fry carefully for 10 minutes on medium-high, stirring, until soft.
Reduce the heat to low, season and cook for another 10 minutes. Stir from time to time until the sauce has thickened. Season to taste with salt and pepper.
