Hogao is a typical Colombian sauce that is used as a side dish, for seasoning or as an ingredient in various dishes. It goes particularly well with arepas but also tamales and patacones.

Ingredients
 

  • 4-5 shallots
  • 1 clove of garlic
  • 2 medium tomatoes
  • 3 tbsp olive oil
  • 1 tsp cumin
  • ¼ tsp pepper
  • ¼ tsp salt, optional

Instructions
 

  • Peel and chop the shallots and garlic. Wash and dice the tomatoes.
  • Heat a pan with oil and add the tomatoes, shallots, garlic and cumin and fry carefully for 10 minutes on medium-high, stirring, until soft.
  • Reduce the heat to low, season and cook for another 10 minutes. Stir from time to time until the sauce has thickened. Season to taste with salt and pepper.
  • Hogao can be served hot or cold.
