Hogao is a typical Colombian sauce that is used as a side dish, for seasoning or as an ingredient in various dishes. It goes particularly well with arepas but also tamales and patacones.

Hogao is a typical Colombian sauce that is used as a side dish, for seasoning or as an ingredient in various dishes. It goes particularly well with arepas but also tamales and patacones.
Ingredients
- 4-5 shallots
- 1 clove of garlic
- 2 medium tomatoes
- 3 tbsp olive oil
- 1 tsp cumin
- ¼ tsp pepper
- ¼ tsp salt, optional
Instructions
- Peel and chop the shallots and garlic. Wash and dice the tomatoes.
- Heat a pan with oil and add the tomatoes, shallots, garlic and cumin and fry carefully for 10 minutes on medium-high, stirring, until soft.
- Reduce the heat to low, season and cook for another 10 minutes. Stir from time to time until the sauce has thickened. Season to taste with salt and pepper.
- Hogao can be served hot or cold.
