
Guiso de Lentejas

Guiso de Lentejas is regularly served in restaurants in Argentina. There are different versions with meat and occasionally vegetarian versions. Besides soup, it is very often eaten on cold winter days. This recipe is the veganised version of a guiso with chorizo. The guiso can be eaten plain or with rice.

Guiso de Lentejas
Ingredients
- 1 onion
- 1 red bell pepper
- 1 green bell pepper
- 1 potato
- 1 carrot
- 200 g lentils
- Pepper
- 1 tbsp paprika powder, sweet
- 1 bay leaf
- ½ tsp miso paste dissolved in 500 ml water, alternatively vegetable stock
- 200 g smoked tofu
- 1 tsp frying oil
Instructions
- Wash the vegetables and peel the onion.
- Dice the onion, peppers, potato and carrot.
- Steam fry the onion in a pot until it is translucent. Add the peppers and fry for 5 minutes.
- Then add the carrot and potato and fry for another 5 minutes. Add water if necessary.
- Add the lentils pepper, paprika powder and bay leaf.
- Add the water, dissolve the miso paste in it and cook on medium heat (approx. 20 min) until the lentils are soft. Add more water if necessary.
- Meanwhile, dice the tofu, fry in a little oil and add ten minutes before the end.
