
Ensalada Criolla

Ensalada Criolla is common in southern South America. As a basic recipe, it is often eaten with asado. This is the Uruguayan version of this mixed salad. It also exists in countries like Peru, Chile and Argentina. However, there it consists mainly of onions, tomatoes and coriander, while the Uruguayan version is much more elaborate.



Ensalada Criolla
Ingredients
- ½ lettuce
- 100 g spinach
- 1-2 sprigs cilantro
- 1 tomato
- 5 g chives
- 1 avocado
- 100 g silken tofu
- 1 tbsp olive oil
- Kala Namak Salt
- Pepper
Dressing
- 2-4 stalks parsley
- ½ tsp mustard
- 4 tbsp oil
- 1 tbsp vinegar
Instructions
- Wash the lettuce, spinach and coriander and shake dry. Shred the lettuce with your hands and place in a bowl with the spinach. Finely chop the coriander and add.
- Wash and dice the tomato.
- Wash the chives and cut into small rolls. Halve the avocado, peel and cut into segments.
- Put all these ingredients in a salad bowl.
- Slice the silken tofu. Heat 1 tbsp olive oil in a frying pan. Fry the tofu slices in it and season with Kala Namak salt and pepper.
- For the dressing, wash and chop the parsley.
- Mix all the ingredients for the dressing and dress the salad. Garnish with the tofu slices.
