
Red Lentil Soup

This creamy, spicy soup not only heats you up, but is also quite filling thanks to the lentils. It is therefore perfect for the cold half of the year. As it is very similar to a dhal, you can serve it with Indian flatbread or other side dishes from Indian cuisine. Bon appétit!

Red Lentil Soup

- hand blender
Ingredients
- 1 onion
- 2 cloves of garlic
- 3 cm ginger
- 1 red pepper
- 1 stick of celery
- 1 large carrot
- 1 tbsp olive oil
- 3 tsp mild curry powder
- 175 g red lentils
- 700 ml vegetable stock
- 1 can coconut milk
- ½ lemon, juice
- Cayenne pepper
Instructions
- Wash or peel and dice all the vegetables.
- Heat the oil in a pot and fry the garlic, ginger, onion and curry powder briefly.
- Wash and drain the lentils and add to the pot with the rest of the vegetables.
- Add the vegetable stock and coconut milk, mix in and bring to the boil. Then simmer for 25 minutes.
- When the vegetables are soft, puree the soup with a hand blender and season with lemon juice and cayenne pepper.
