
What I eat in a day on the Quilotoa-Loop
To give an authentic insight into a vegan live in South America, I decided to pick a random day and show you what I ate. This time it’s the day I walked the Quilotoa-Loop.
The day starts at 4:30 am. I wake up and get ready for the bus at 5 am that brings me from Chugchilan to Quilotoa. After a freezing sunrise I start the walk with my new friends. As I do intermittent fasting at the moment I only drink of my bottle of water. 1.5l during the hike. At about 10am I decide to start to eat a bit earlier today. We just climbed down the highest peak of 3990 m. I have a sandwich from the hostel breakfast box, we got. They made me a moustard salad sandwich with lettuce, tomatoe and cucumber. After that I have three bananas to fill my stomach a bit more. During the rest of the hike I eat another two bananas and a piece of dark chili chocolate. I normally don’t eat that much bananas a day, but they are the perfect hiking snack. After returning to Quilotoa I’m hungry and thirsty. As my bus leaves in half an hour (there’s a bus every two hours) I decide to buy some unhealthy empty calories and 1.5l of water. I eat all the 6 Oreos and the 125g potato chips and drink all of the water. I still have Chiffles and an apple in my backpack, but I don’t need it. In the evening I visit Kipi Natural in Latacunga. This restaurant owned by an indigenous nutritionist has a vegan menu today (accidentally vegan, as I see they also have chicken and tuna on the menu on other days). It starts with a traditional quinoa soup, then there is a salad of raddish and green beans, followed by the main, consisting of potatoes in tumeric and seitan slices.
All in all I ate 3046 calories. Here is what my app says about it.
It was surely not my healthiest day, but that’s why I choose a random day.
