Guyanese Style Chow Mein

Guyana has a very diverse population. Among them are many Guyanese with Chinese roots. So it is not surprising that you will find a Chinese restaurant in every town. restaurant in every village and that this recipe is very much appreciated by all Guyanese. Guyanese. Normally, one can choose between meat, fish and vegetarian (vegetables only) when you order the noodles in the restaurant. To spice up the recipe a bit, I didn’t just omit the meat, but replaced it with tofu. In Guyana, you can find tofu in Chinese supermarkets.

Guyanese Style Chow Mein

Ingredients
 

  • 240 g vegan chow Mein noodles
  • 2 tbsp sesame oil
  • ½ tsp black pepper
  • ½ tsp Chinese 5- Spices powder
  • 1 tsp garlic powder
  • some salt

Vegetables

  • 100 g white cabbage
  • 80 g carrots
  • ½ red pepper
  • 2 shallots
  • 3 tbsp low-sodium Soy sauce
  • 1 tbsp sesame oil
  • 60 ml water
  • 1 tsp freshly grated ginger
  • 1 handful mung bean sprouts
  • 1 Wiri-wiri Pepper or Scotch Bonnet (100000- 350000 scovilles), alternatively hot chilli, optional

Tofu

  • 250 g tofu
  • 1 tbsp olive oil
  • 3 tsp soy sauce
  • 1 tbsp cassava syrup, alternatively maple syrup
  • 2 tbsp green seasoning
  • 1 tsp frying oil

Instructions
 

  • The night before, dice the tofu and marinate with olive oil, soy sauce, cassava syrup and Green Seasoning.
  • the next day, wash or peel the cabbage, carrots, peppers and shallots, cut into strips and set aside.
  • In a large saucepan, cook the pasta according to the packet instructions.
  • Drain the noodles, rinse with cold water and place in a bowl.
  • Season with sesame oil, black pepper, Five Spices powder, garlic powder and salt, mix and set aside. set aside.
  • Fry the tofu in a pan for 8-10 minutes with a little oil over a low heat. over a low heat until most of the liquid is gone. liquid is gone. Set aside.
  • heat the soy sauce, sesame oil, water and ginger in a wok. Add the cabbage, carrots and peppers and fry for 3 – 4 minutes.
  • then add the noodles, tofu, sprouts and shallots, fold in carefully and serve.
