vegan “Magenbrot”
Unfortunately, “Magenbrot” is not usually vegan. Although it would be really simple to veganize. I had already tried to make “Magenbrot” myself years ago, when I was not yet vegan, but it didn’t work. I got the base for this recipe from vegallen, a recipe that works. This year, however, I have made it not only gluten-free but sugar-reduced as well. Furthermore, I have made some other changes. Have fun trying it out! Ceviche de Banana
Ceviche is the national dish of Peru. It is prepared on the coast with raw, freshly caught fish and is therefore not eaten in the evening. The dish also exists in other Latin American countries such as Chile, Ecuador and Colombia and dates back to the time before the conquest. In the meantime, vegan variants are spreading. For example, there is mango ceviche, palm heart ceviche, bean ceviche or plantain ceviche. They usually only have the sauce in common with the original. Argentinian Empanadas
Empanadas are eaten in Spain, Central and South America and the Philippines. Argentine empanadas are semicircular dumplings and have a maximum diameter of 20 cm. In Chile, mayonnaise is put on all kinds of dishes. That’s why a vegan mayonnaise recipe is a must. My host in Santiago made this mayonnaise for me. Of course, the chickpeas can also be used to make a delicious hummus.
