
Celery Soup
This simple, delicious and warming soup recipe is a staple of seasonal winter cooking. Celery can be combined with various other winter vegetables or fruits, each of which gives the dish its own flavour. Celery-ginger soup is particularly good for sore throats, as the ginger counteracts inflammation. The coconut milk makes this cream-soup even creamier, but you can also omit it if you want to reduce fat. Either way, it is a simple and quick dish.

Celery Soup
Equipment
- hand blender
Ingredients
- 1 celeriac
- 1 tsp miso paste
- 3 cm ginger, or ginger powder
- ¼ tsp turmeric
- Pepper
- 1 dash of coconut milk, or vegan cream.
Instructions
- Peel and roughly chop the celery and place in a pot. Fill the pot with water until the celery is covered.
- Bring to the boil and then reduce heat to low and simmer for 20 minutes. Add the miso paste.
- In the meantime, peel the ginger.
- When the 20 minutes are up and the celery is soft, you can add the ginger and puree the soup with a hand blender.
- Season with turmeric and pepper and optionally add the coconut milk.
- Serve warm.
